The Bonfire Restaurant’s Executive Chef Brian Fowke is classically trained in French cuisine, having spent a good portion of his formative career in the legendary “Joe Fortes” Vancouver kitchen. His philosophy on food is one of layered flavors with dishes that are influenced by West Coast cooking styles. Chef Fowke has been coming to the Okanagan Valley for many years to meet with local farmers and produce growers and expanding his vision and passion for fresh, locally sourced and locally inspired foods. His cuisine is complemented by ingredients plucked fresh from the Bonfire’s organic Culinary Garden and can be paired with an extensive wine list featuring local Okanagan wines produced by world-class operations and family-run boutique vineyards.
